Gluten Free Okonomiyaki
Serves: 2
The Batter:
1) Combine in a bowl, stir together with a whisk
- 100g Corn Flour [Gluten Free]
- 1/4 tsp Baking Powder
2) Dissolve in cup
- 3 g Dashi Stock
- 140 ml Hot water
3) Gradually add liquid to dry ingredients while whisking in the bowl
4) Add a sprinkle of salt
5) Prepare then add into the mixing bowl
- 200g Long green onion [Fine pieces]
- 200g Cabbage leaves [stem removed +finely chopped]
- 1 Tbs Tapioca flour
- 50g Frozen squid [microwaved and sliced finely]
- 125g Frozen prawns [microwaved and chopped into chunks]
- 2 eggs
6) Lightly toss all the ingredients to coat [NOTE: Do not mix the batter too much]
7) Pre-heat the pan to hight heat coat surface with vegetable oil
8) Cook on 1 side for 2 mins, flip and repeat on the other side
9) Flick over again and set to low heat, cook with lid close for 3 mins
10) Coat with okonomiyaki and mayo sauce and sprinkle on the fish flakes.
