Hubby loves roti prata so I decided to attempt at making it for him:)
Decided to make a curry with dhal, cauliflower, potato and home-grown kale to go with it.

Roti Prata
Ingredients
- 450 g Plain Flour
- 2 pinches Baking Soda
- 1 tsp Salt
- 2 Tbsp Sugar
- 1 [50 g] Egg
- 100 g Milk
- 130 g Water
- 2 Tbsp Neutral Flavoured oil
Directions:
- Pour in dry ingredients into the mixing bowl
- 450 g Plain Flour
- 2 pinches Baking Soda
- 1 tsp Salt
- 2 Tbsp Sugar
2) Followed by wet ingredients
- 1 [50 g] Egg
- 100 g Milk
- 130 g Water
- 2 Tbsp Neutral Flavoured oil
3) Mix using dough hook for 4 – 5 mins till a dough forms
4) Place dough in a greased bowl, cover fully with a damp tea towel for 30 mins
5) Form the dough into equally sized round portions [about 60 g] and cover with a damp towel for 30 mins
6) Lightly grease your palm and flatten each dough ball
7) Flip the prata, rotate each time you flip to stretch out your dough in a thin layer
OR
Just stretch the dough out until it becomes a thing layer
8) Gather the dough lengthwise and coil it into a spiral shape tucking it into the middle neatly
9) Cover with a wet towel and let it rest for 30 mins
10) Flatten the dough with your fingertips to prepare it for frying
11) Lightly grease a pan and fry it on medium-high heat, flipping constantly
12) Fry till it’s crispy and golden brown
13) Give it a little fluff to release the layers
