I found the glucose syrup from the shop a bit too expensive, so I decided to make my own.

DIY Glucose / Corn Syrup Substitute

recipe modified to my own format

Ingredients:

2 Cups  White Sugar
3/4 Cups Water
1/4 Tsp Cream of tartar
1 pinch Salt

Method

1) Combine in a saucepan on MED heat

2 Cups  White Sugar
3/4 Cups Water
1/4 Tsp Cream of tartar
1 pinch Salt

2) Slowly stir mixture till sugar is dissolved

3) When the sugar is dissolved and it starts to boil bring it down to a MED or LOW heat reducing the boil to a simmer

4) Take the saucepan off the stove when the mixture reaches the SOFT BALL Stage [115°C or 240°F]

5) Let it cool down for about 1 hour

6) Once it cools down it’ll thicken even more. You can use it straight away or you can put it in a sealed jar. It’ll last a year or so in a sealed jar.
