Kale, Dhal, Cauliflower and Potato Vegetable Curry | Cooking Adventures | Vegan

Based on your request, here is the recipe for the vegan vegetable curry for the roti prata and curry dish we had for dinner.

I pretty much made it with what we had in the pantry, fridge or garden.

I also modified the recipe for Irritable Bowel Syndrome and I felt fine after eating this curry:)

Kale, Dhal, Cauliflower and Potato Vegetable Curry

Ingredients 
  •  Onion [ I replaced it with 3 celery sticks as my gut doesn’t like onions ]
  • 3 clove  Garlic
  • 1 Thumb-size piece of Ginger
  • 1 Tbsp Oil
  • 1 handful Curry leaves [ from our backyard^^ ]
  • 1 tsp Turmeric
  • 2 tsp Mustard seeds
  • 1 x 600 g coconut milk [I just used 300 g Coconut Cream + 300 g Hot water
  • 300 g Dried Lentils
  • 86 g Kale [ Home grown:) ]
  • 1 Cauliflower
  • 4 Potatoes [cubed]
  • Salt
  • Pepper
 Directions:
  1. Put in a food processor and blitz into a paste
  •  Onion [ I replaced it with 3 celery sticks as my gut doesn’t like onions ]
  • 3 clove  Garlic
  • 1 Thumb-size piece of Ginger

2) Put in a pot on medium-high heat and stir well

  • 1 Tbsp Oil
  • 1 handful Curry leaves [ from our backyard^^ ]
  • 1 tsp Turmric
  • 2 tsp Mustard seeds

3) Add the blitzed paste and fry for a couple of minutes before adding in

  • 1 x 600 g coconut milk [I just used 300 g Coconut Cream + 300 g Hot water
  • 300 g Dried Lentils
  • 86 g Kale [Home grown:) ]
  • 4 Potatoes [cubed]
  • 1 Cauliflower

4) Put the lid on and boil stirring  from time to time for about 40 mins or until vegetables are cook. Or when you can smell the smell of curry wafting your home 😛
