Pan Fried Snapper On A Bed of Home Grown Sow Thistle with crispy Home Made Potato Chips | Cooking Adventures | Vegertarian

Pan Fried Snapper On A Bed of Home Grown Sow Thistle with Home Made Potato Chips

Tonights Dinner pan fried snapper on bed of homegrown sow thistle and home made potato chips in the microwave!
Tonight’s dinner pan-fried snapper on bed of homegrown sow thistle and home-made potato chips in the microwave!

The snapper was just rubbed with salt and pepper and olive oil and pan-fried on each side for a few minutes. Easiest way to tell if the fish is cooked is to watch the meat turn opaque white.

Usually I put the fish in skin side down to let it brown a little about 3 – 4 mins then flip it on the other side for 2 mins.

The sow thistle was harvested from our back yard, I just stripped the leaves off the plant and gave it a wash ensuring there was no dirt left then I pan-fried with garlic salt and pepper. It has the texture of spinach and the taste of kale.

The potato chips was a fun experiment! It was made in the microwave!! So fast and so good!!^^
